Fusion At The Republic Of Boulder is on a quiet street in the old city of Boulder. The facade is not big, so you will discover a unique place when you enter. What they make is interesting-blending Asian, Mexican and Middle Eastern seasonings, like Korean roast beef taco with mango chili sauce, or hummus with truffle oil and crispy naan. Change menus frequently and follow the local farm. It is suitable for several people to share at a starting point at a table, with a glass of natural wine, and you can go upstairs to watch a performance after eating.
